Chicken Koftas
Serve these juicy chicken koftas in a pita bread piled high with tzatziki and tomato and cucumber salad.
The ingredient of Chicken Koftas
- 1 tablespoon extra virgin olive oil
- 1 brown onion chopped
- 1 garlic clove crushed
- 1 4 cup 40g lucky pine nuts finely chopped
- 2 teaspoons ground cumin
- 500g chicken mince
- 1 egg lightly whisked
- 1 2 cup 100g couscous
- pita bread to serve
- 1 punnet cherry tomatoes quartered
- 2 lebanese cucumbers seeds removed chopped
- 1 4 cup fresh mint leaves
- 1 tablespoon extra virgin olive oil
- 2 teaspoons fresh lemon juice
- salt freshly ground pepper
- tzatziki to serve
The Instruction of chicken koftas
- heat the oil in a frying pan over a medium heat add the onion garlic pine nuts and cumin cook for 8 9 minutes or until soft cool slightly
- combine the chicken mince egg couscous and onion mixture in a bowl season divide into 16 even portions shape each portion into a 7 8cm long sausage shape refrigerate for 30 minutes
- thread the sausages onto skewers cook turning until cooked through serve with the salad tzatziki and bread
