Chicken Koftas


Serve these juicy chicken koftas in a pita bread piled high with tzatziki and tomato and cucumber salad.

The ingredient of Chicken Koftas

  • 1 tablespoon extra virgin olive oil
  • 1 brown onion chopped
  • 1 garlic clove crushed
  • 1 4 cup 40g lucky pine nuts finely chopped
  • 2 teaspoons ground cumin
  • 500g chicken mince
  • 1 egg lightly whisked
  • 1 2 cup 100g couscous
  • pita bread to serve
  • 1 punnet cherry tomatoes quartered
  • 2 lebanese cucumbers seeds removed chopped
  • 1 4 cup fresh mint leaves
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons fresh lemon juice
  • salt freshly ground pepper
  • tzatziki to serve

The Instruction of chicken koftas

  • heat the oil in a frying pan over a medium heat add the onion garlic pine nuts and cumin cook for 8 9 minutes or until soft cool slightly
  • combine the chicken mince egg couscous and onion mixture in a bowl season divide into 16 even portions shape each portion into a 7 8cm long sausage shape refrigerate for 30 minutes
  • thread the sausages onto skewers cook turning until cooked through serve with the salad tzatziki and bread
